Chef Peter
Peter is a graduate of the Culinary Institute of America in Hyde Park New York, and immediately upon graduation – went to work for Chef Jonathan Waxman of Jams and Buds Restaurant fame in New York.
A native New Yorker – Peter continued to forge his culinary path early on by working alongside some of the most noted New York Celebrity Chefs in the business. Larry Forgione of An American Place, Daniel Boulud of Restaurant Daniel, and Chef Jean Georges Vongerichten to name just a few .
What inspired you to become a professional chef; was there someone who influenced you the most?
For me I’d like to believe it was a natural gravitation towards food and cooking – but it may have had more to do with the fact I grew up in a household with 5 other siblings – and if you weren’t on time for dinner – you basically had to fend for yourself! All kidding aside – I owe an awful of credit to my Mother. She was a fabulous cook and always encouraged me to pursue my dreams and to do something that I truly enjoyed for a living. She would always say… “ What other profession allows you to see a Beginning an End to what you do every day? That has stayed with me to this day.
